Oh my gosh, it has been such a crazy week!  Between studying, sorority stuff, meetings, and just general craziness, I’m extremely happy it’s all winding down a bit.  I like being busy, but there’s only so much I can do in a day!

I did manage to take a few food photos, though.

 

Lunch: toast with pesto hummus (OMG YUM) and cucumber + carrot salad with balsamic vinegar…

Dinner: a yummy spinach salad topped with cucumber and feta, crispy fish, and a roll.

So yeah… this was so necessary: the past few days have been marathon days!  On Friday I went to a 9 am class, then studied for a test, then took the test, then went to my chemistry lab, then got ready for a sorority event in the chemistry building, then was at the event until 1 am.  This Diet Coke was consumed over the course of the day…

One of my favorite parts of the sorority event on Friday was that the fraternity guys gave us all roses!  My roommate and I are hanging ours upside-down so they dry nicely.

On Saturday, I studied all day (bleh) and made cinnamon toast with my boyfriend at night.  We sold it to people in the dorm as a fundraiser for Dance Marathon, and even though we didn’t make much money, it was a lot of fun!

I just got back from a family super bowl party, and there was tons of delicious food there!  Photos + recipes to come… hopefully soon! Smile

Hello, lovelies Smile This is the first Saturday in a long time when I’m not traveling/rushing/doing something extremely time-consuming!  Yay!

Lunch!  A big salad full of cucumbers, carrots, broccoli, mushrooms, tofu, and balsalmic vinegar.  My friends make fun of me for eating salads without lettuce in them.  That’s mainly because the lettuce in the dining hall looks like it has been there for 6 months.

My boyfriend and I trekked through the snow (literally) to get to town.  We had nothing better to do and he was adament that I don’t do homework.

We went to Whole Paycheck Foods!  I picked up some carob-covered almonds and Thinkthin bars.  I’ve never tried carob-covered almonds before, but they were actually pretty tasty!  Chocolate ones are better, though.  Carob tastes nothing like chocolate, in my opinion.002

I also picked up this journal at Barnes & Noble, which was the cheapest one they sold and thus my favorite one.  I’m going to use it as a recipe book, because recipe books just sort of make me happy. Smile

You know what doesn’t make me happy?  Chem homework.  Despite my best efforts to make it colorful and somewhat interesting, it still just isn’t fun.004

I took a break from homework to paint my nails!  This is a Revlon polish called Plum Seduction and it is lovely!

Then I did some more chemistry and took a break for dinner…

Stuffed Pasta Shells Bowl

Amy’s Bowls are my favorite!  They are great for college students (aka they’re cheap and fast), they’re healthier than pretty much every other frozen meal, and they taste delicious!  This is totally something I would make at home if I had a full kitchen and a lot of motivation, so it is nice to have a stock of these in my fridge when I’m craving good Italian food.  And I promise, Amy’s Bowls are good.  Check out the nutrition info, if you don’t believe me!

Ingredients : Organic broccoli, ricotta cheese, organic pasta shells (organic semolina flour, water), organic tomato puree, organic lowfat milk, organic spinach, organic onions, filtered water, Parmesan cheese, organic extra virgin olive oil, organic basil, grade AA butter, organic sweet rice flour, organic garlic, sea salt, Monterey Jack cheese, spices. I’m now off to do some more homework (art history, seminar paper, and chemistry of course!) then relax for a bit, if I can stay awake that long!

Chicago Trip!

My family and I took a mini vacation to Chicago!  We left around noon on friday, checked into our hotel, then headed to Foodlife in Water Tower Place where I got a ginormous veggie-filled salad and a wheat roll.  Foodlife is a big food court-style restaurant, but instead of fast food everything is better quality and so delicious.  If you’re ever in Chicago, stop by for lunch!

After lunch, I took it upon myself to try on crazy expensive dresses and not buy them…

We stopped to indulge in cupcakes from Sprinkles, aka the best cupcakes ever!  Mine was a dark chocolate cupcake with chocolate frosting…

On Friday, my mom and I went to see The Nutcracker!  We go every year, and it is always amazing.  Smile I absolutely love the venue: the  Auditorium Theater.  Being there makes me feel like I’ve traveled back in time, with all the gold and the ornate décor…

It was a great trip with the family, and Chicago is an awesome place to do some last-minute Christmas shopping!  I can’t believe Christmas is tomorrow; this year has flown by!

Can I just day how much I love the holiday season?  Everything is just so festive and fun. 🙂

Breakfast… a whole grain bagel with a Laughing Cow wedge spread on top- OMG it tasted just like cream cheese!  Delicious.  Plus my second-to-last clementine.  Note to self: buy more.  Clementines are amazing when they’re in season!

After breakfast, I headed to the gym for some elliptical and abs.  I increased the length of my elliptical workout from 30 to 35 minutes and I felt great after!  Totally symptom-free.  Win.  Smile  I then drove to the mall and picked up a few last-minute Christmas gifts, then stopped at Foodstuff’s for a salad to go…

Amazing.  I also had some peanut butter a la spoon.

I’m off to go bake sugar cookies with my sister!  We love decorating cookies. Smile
