I got this peplum blouse at Forever 21.  I love all things peplum, and the pattern is lovely!

Old Navy was having a huge sale, and I got these adorable navy blue boat shoes.  I always feel strange wearing sandals to work even though the dress code is casual, so these will be perfect.

My new running shoes!  I got these Nike Air Pegasus 29+ shoes on sale at Nordstrom Rack for only $40.  They are so comfortable, and cute too!

Peanut butter frozen yogurt from Love’s Yogurt as a post-work treat.  Love’s Yogurt has been around before frozen yogurt was trendy, and it’s delicious!

Happy Monday!

MiMM MIMM #51 with Lots of Fun Highlights From The Weekend!

On Friday, my sister came to visit!  My boyfriend, she, and I all went to Andy’s for frozen custard.  Have you ever had Andy’s custard?  It’s legendary.  The boyfriend and I split a peanut butter and brownie concrete with hot fudge, and it did not disappoint.

Saturday morning, my sister and I got bagels from Einstein’s.  I had my usual order: a 9-grain bagel with egg whites and cheese.

My dad brought Daisy when he came to pick my sister up!  My sorority sisters came outside (barefoot, apparently) to pet her.  Obviously Daisy loved the attention… she’s such a diva!

For dinner my friends and I ordered takeout from a Middle Eastern restaurant.  Obviously I ordered hummus, and it was amazing!

On Sunday, my sorority had our annual philanthropy event.  We raised money for domestic violence awareness and prevention.

It has been a marvelous weekend, but now it’s time to actually get started on homework.  Have a wonderful Memorial Day, everyone.

This is my boyfriend Sebastian and I.  You’re probably wondering why I’m wearing a headband.  Aside from the fact that I just *love* looking like a 5-year-old, I was wearing it for a “rep your hometown” party.  My hometown is known for its preppy-ness, so I went a little crazy with my outfit.  Sebastian dressed up with me, too!  The party was at Dave & Buster’s, and he and I got lots of funny stares from people dressed in normal clothes.  We had lots of fun playing games: he wanted to play fun games while I wanted to play ones with high ticket payouts… I wonder what that says about us!

 

That party was one of the last fun things we did before the end of the school year- finals week is stressful!  Now I’m at work typing this post.  I’m working as a nanny this summer… the hours are long but it’s fun and surprisingly less stressful than waitressing.  A young child is easier to care for than adults at a restaurant.  Go figure.  He’s napping now so I get a little break.

 

Let’s see… exercise!  Work takes up most of the day on weekdays, but I enjoy taking the child on walks around the neighborhood.  That counts, right?  I’m usually really tired after work, and I hope my body will eventually adapt so I can go to the gym at night.  I need to get in shape for my pageant later this summer!

A few nights ago, it was raining.  Hard.  Like, torrential downpour-style.  And I was supposed to go to a frozen custard fundraiser for my boyfriend’s crew team.  But it was almost a mile away from my dorm and needless to say, that was not going to happen.

So I was sad.  And my boyfriend was sad.  And all I wanted to do was eat raw cookie dough with a spoon and watch Dance Moms. 

Dance Moms wasn’t on, but I got one of my wishes…

It’s egg-free, so you can (and should!) eat it raw.  It’s not healthy in any way, but it’s good for the soul.

Hello, lovelies Smile  I’m currently drowning in a big pile of homework but that’s okay because I’ve got an entire night free to do it, which is a rare occurrence!  I thought I would focus only on school in college and stop doing extracurriculars, but that is definitely not the case.  I’m more involved now than I ever was in high school!  Anyway… what have I been up to?

On Sunday I visited the Art Institute for my art history class.  I’ve been countless times but taking the class has given me a new appreciation for the art, which is pretty cool.  I definitely felt like a pretentious yuppie staring at this painting, Berthe Morisot’s Woman at her Toilette for 20 minutes. :/

I then returned home and realized I had a ton of stuff to do and I’d better get my head out of the artsy clouds and into this laundry list of work, which is where I stand now.  Typing away at my little laptop being antisocial.  Gotta love it. Smile

But let’s look at the bright side… I did have a really good breakfast this morning!  I swear, breakfast in the dining hall is the only good meal there.  I should go more often!  I got a made-to-order egg white omelet with cheese, salt, and pepper…

Then I went to my first class, art history, where I sipped on some vanilla caramel black tea in a crowded lecture hall.   I bring my own tea and mug and fill it with hot water from the dining hall, then sip on it all day like it’s the nectar of the gods.  I’m pretty sure the guy sitting behind me noticed me taking this picture.  Whatevs.

You can’t see it very well, but it was snowing HARD.  As in, it obscured my vision and made me wish I didn’t live in Chicago.

But it was all good when I got back from CVS to use this…

I finally found a nail polish in my favorite color!  This is Sally Hansen Hard as Nails X-Treme Wear in #340 Mint Sorbet.  It was only $4.00 and it’s been a long week so I decided to treat myself.

Multi Grain Peanut Butter Cheerios!!  A combination of two of my favorite foods: Cheerios and peanut butter.  I may or may not have done this…

I’m much too civilized.

And I hadn’t had my caffeine yet.

I tried a few when I got home and they are just as good as you’d think they would be.  If Cheerios and Peanut Butter Cap’n Crunch had a baby, it would be this cereal.  And now I have my caffeine in the form of lukewarm green tea from the dining hall.

A Short Rant…

I just read Meghann’s post and it really struck a chord with me.  You would not believe how many times I’ve been told I can’t do something because I have a chronic illness.  And sometimes, the person is right, I can’t.  But more often than not, they’re wrong. 

Can I go for a run outside?  No, it’s not safe.

Can I use the elliptical for 30+ minutes?  Yes!

Oftentimes people don’t outright tell me, “You can’t do that!” but they do it in such a way that sounds polite yet still condescending.  It is for this reason that I don’t tell people about my illness.  More often than not, it rears its ugly head on its own (aka: I faint), telling the world, “Courtney is messed up!”  There are limitations on what I can do: I get tired more easily than other people,and I sometimes get really sick and dizzy for no apparent reason.  But you’d better believe I don’t let these limitations stop me.  I am not weak.  If you tell me I am, I’ll show you I’m not.

Okay, I’m done.

This scenario happens fairly often in college:  you just don’t want to walk to the dining hall.  It doesn’t matter where the dining hall is- if it isn’t 4 feet or less away from you, it’s just not happening.  That’s where dorm snacks come in.  Here are my essentials for staying healthy in college without spending too much money.

Amy’s Kitchen Frozen Dinners

Pesto Tortellini Bowl

Stuffed Pasta Shells Bowl

Macaroni & Cheese

They’re all organic and super good for you, but tasty too!  You won’t feel bad about heating up a frozen dinner after a long day if you choose a healthy option.

Hummus and pitas

Need a quick snack?  Have half a pita with hummus.  Want a full meal?  Have an entire pita with hummus!  This is one of the few snack foods that is satisfying enough to also be a good lunch or dinner.  Or breakfast.  I don’t judge.

Chocolate Covered Anything

Well… maybe not anything!  But chocolate-covered nuts or malted milk balls are great quick energy boosts when you just need that chocolate fix.  The nuts have healthy fats and vitamins, while the malt balls take a longer time to chew so you are forced to sloooooow down.  Dark chocolate is better (hello, antioxidants!) but if you’re not used to the bitterness, start with a low cacao percentage and work your way up.  I can tolerate around 80% cacao now, but 100% is just way too bitter for me!

Microwave Popcorn

Popcorn is a perfect snack for when you want something satisfying that won’t weight you down.  Just 2 minutes in the microwave and you have plenty to share!  Or not.  Again, I don’t judge.  Choose a low-fat, trans-fat-free variety.  Movie theater butter = bad idea!

Natural Peanut Butter

You can find any nut ground into butter these days, but when it comes to price, peanut butter is always the cheapest option.  You can find a natural jar of peanut butter for a pretty good price these days, and it has healthy fats and protein to keep you full.  I like it spread on wheat crackers, a banana, or just a spoon. Smile with tongue out

Whether for breakfast on the way to class or a quick snack after my chemistry lab, bars are perfect, nutritious options.  I like ThinkThin bars the best, but they are pretty expensive so buy them by the box – most stores will charge you less than if you bought each bar individually.  They’ll also satisfy a sweet tooth, so have one for dessert (heat it in the microwave for 15-20 seconds) and indulge!

Dishes / Utensils

Never Leaf Hungry Bowl Set Cutensils Cutlery Set

These may not be food, but they are so important to have in your dorm room!  I’d recommend getting at least 2 of everything (plates, bowls, forks, knives, spoons) so you can share with people.  And don’t forget dish soap!

 

What is one thing you wish you’d brought with you somewhere, but forgot?  Definitely my camera… I always forget it at the most opportune photo moments!

If you were stranded on a deserted island and could only have one food (healthiness doesn’t matter!), what food would you take?  I would choose peanut butter cups! Smile

Yesterday my boyfriend came over and we made Christmas cookies!  Any guy willing to bake with me is definitely a keeper. Winking smile

We made peanut butter blossoms…

My boyfriend had never had a peanut butter blossom, and he loved them!  He also took the liberty of lining up the Hershey hugs so all the lines match up…

Peanut Butter Blossoms – makes 30:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup light brown sugar
  • 3/4 cup granulated sugar, divided
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 30 Hershey kisses (or hugs!), unwrapped
  1. Cream together butter, peanut butter, egg, vanilla, brown sugar, and 1/2 cup granulated sugar.  Fold in flour, baking soda, and salt.
  2. Preheat oven to 350 degrees F.  Roll dough into 1.5-inch balls, then roll the balls in the remaining 1/4 cup sugar to coat them.
  3. Bake the cookies on an ungreased cookie sheet for 8-10 minutes.
  4. Immediately after the cookies come out of the oven, press a candy into each one.  Let the cookies cool completely before you eat them.

We also made peppermint patty-stuffed chocolate cookies!  These are dangerous…

Peppermint Patty-Stuffed Fudge Cookies – makes 20:

  • 5 tablespoons unsalted butter, softened
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup dark chocolate cocoa powder
  • 5 squares unsweetened baking chocolate, melted
  • 1/2 teaspoon peppermint extract (optional)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 20 peppermint patties, unwrapped and frozen
  1. In a large bowl, combine butter, sugars, and eggs using an electric mixer.  Fold in cocoa powder, chocolate, extract, flour, baking powder, and salt.
  2. Chill the dough for 1 hour in the fridge.
  3. To assemble the cookies, press 1/2 tablespoon of dough into a patty, then press another 1/2 tablespoon into the other side of the patty.  Seal the dough so it totally envelopes the candy- if any is exposed, it will ooze out while the cookie bakes!
  4. Preheat oven to 350 degrees F.  Line a cookie sheet with parchment paper and place the dough onto it.  Bake for 10 minutes, then let the cookies cool completely before eating.
