These are good cupcakes. Not the kind you get at the grocery store- these are real cupcakes made with real butter and real pronounceable ingredients. They’re not any healthier than regular cupcakes, but at least they’re natural, right? And super easy to make. You don’t need a mixer, and you only need one bowl. Two if you count the frosting.
Preheat the oven to 350 degrees F. Melt a stick of salted butter in a large bowl. Just do it in the microwave. Stir in 3/4 cup granulated sugar and 1 1/4 cups all-purpose flour.
Add 1/2 cup Greek yogurt and 3/4 cup milk. I used skim milk, but just pour in whatever you have around. Add 1/2 cup cocoa powder and stir it a lot.
Just two more ingredients- promise! Add 1 1/2 teaspoons baking soda and 1/4 teaspoon vanilla extract. Mix well until it looks like this beauty.
Scoop the batter into 12 paper-lined cupcake cups. Bake for 22-25 minutes or until they look like this.
Let them cool a bit, then make the frosting! (aka the only real reason to eat cake.) Soften a stick of unsalted butter (eh… or just put it in the microwave for 20-ish seconds). You should be able to easily mix it without chunks flying everywhere. If it gets a little melted, don’t worry. Slowly add 1 1/2 cups of powdered sugar, 1/2 cup milk and 1/2 teaspoon vanilla extract. It should look like very thin frosting, but not as thin as, say, royal icing. It doesn’t have to be perfect; it just has to taste good.
Slather the cooled cupcakes with the frosting- it will be a bit runny. If your cupcakes are looking a little bare, go ahead and give them another coating. They’ll look good. Really good.
